Before I share my advice please know that I am not a medical professional so take whatever I say with a grain of salt. I know nothing about treating a person with diabetes so it would be best if you get advise from your doctor about your diet.
However, the oil you use in this recipe is such a little amount that I think it shouldn’t be eliminated, especially because it is needed for your body to absorb curcumin.

You do not need to do a roux. It is not supposed to be super thick, but you can thicken it by adding more cooked chestnuts and blending them. Have you had a chance to watch the video under the recipe card to see how thick it is supposed to be?

You can use any oil. Avocado oil or ghee are other great oils you can use. However, in a pinch you can even use a mild flavored olive oil (it is not ideal but the amount is so small that it would work). You can use plant milk as well. I usually make this using almond milk or coconut milk.

I think it depends on your expectations. I sub flax eggs in recipes like this all the time for my husband, and the outcome is delicious. It’s NOT going to be the same cake in the pictures – it will be denser, and perhaps closer in texture to a biscuit or scone? But I think you could definitely use flax eggs to adapt this recipe into something tasty and special… if you don’t expect it to be the same cake. There are recipes where an egg sub will cause it to to fail (there’s no getting around eggs in an angel food cake, for example), but in this one, I think it would just be different.

To be honest, I have never made these in a muffin tin. However, having made the actual recipe so many times, I feel like it won’t work. This is mainly because the magic of this recipe is trapping the heat in the Dutch oven and I don’t think that a muffin tin will achieve that.
So, sadly, I won’t recommend cooking this bread dough as muffins.

We are making this Wild Rice Stuffing recipe for Thanksgiving as well. I hope that you like it as much as we do.
To answer your question:
I would prep the recipe exactly as written but do not add the apples, nuts and cranberries a day or two in advance. Bring it to room temperature, place in an airtight container and freeze. Then thaw it in the fridge overnight (on Wednesday.) Prior to warming it up, you can mix in the apples, nuts, and cranberries.
We highly recommend that you warm it up in the oven (perhaps while the turkey is resting) but if you only have the option for warming it in the microwave, then we recommend mixing it with a few tablespoons of water so it won’t dry out. When it comes to warming large amounts of rice (and food in general), my rule of thumb is to warm it up in 30 second increments and mixing it after each session to ensure it is not drying.
As you do that, if you feel like it needs a bit more liquid, then you can easily add and continue to reheat until it is fully heated through.

You are right. It seems like the nutrition calculator I use didn’t get it right. I just rerun it and it went down to 299 calories. Still somewhat high because of the goat cheese and nuts, but if you want you can use a lesser amount to go down on the calories. And to answer your question – This salad is good for 6 servings as a side dish.

I would recommend using butter lettuce instead of iceberg lettuce, but in a pinch, any salad greens would work. If you can get your hands on it, I would recommend a handful of arugula as its peppery flavors pair beautifully with the sweetness coming from pears.
